Dijon-Maple Rainbow Trout


I love fish! And I've been trying new recipes so I look forward to eating it at least a couple times a week. I made the most delicious baked rainbow trout. I can't wait to make it again and have someone else experience how tasty it is! Rainbow trout is an amazing fish because it tastes good any way you make it, whether it's smoked, grilled, pan fried or baked. It's also really high in omega fatty acids which has been proven to prevent heart disease and stroke. There's also other potential benefits for conditions such as cancer, IBS and arthritis. This recipe can easily be used with salmon if you can't find rainbow trout.

Recipe

Ingredients
2 Rainbow Trout Fillets (or salmon)
2 tbsp mayonnaise
1 tbsp dijon mustard
1/2 - 1 tbsp fresh dill, chopped
1 tsp maple syrup
salt

Directions
- Preheat oven to 425 degrees.
- Wash the fillets of fish with water.
- Place parchment paper on a baking sheet, and put the fish (skin side down) on the parchment paper.
- Pat the fish dry with some paper towel.
- In a small bowl, mix the mayo, dijon, dill and maple syrup.
- Spread the mixture evenly on the fish (you just want a thin layer so if you have too much, don't use it all)
- Sprinkle with some salt.
- Bake the fish for around 8-10 minutes per inch (measure the thickest part)
- Serve with veggies and jasmine rice.
